Valley Bounty: Honey

Honey can vary significantly in color and flavor based on the flower the bees have been gathering nectar from. Honey from bees feeding on clover, for example, is light and mild, while buckwheat honey is dark with a molasses-like flavor. Wildflower honeys come from a mix of flowers and change throughout the season.  Try mixing honey with bourbon and mustard as a ham glaze, or add honey and walnuts to soft goat cheese to make a sweet and tangy spread.
